What are some things I can do with butternut squash?
I love squash. the baked with brown sugar option has already been well covered here, but no one mentioned that it's good with carrots baked along with the squash. also, sometimes i'll just cut the squash lengthwise and scoop out the seeds then fill the hollow with the butter and brown sugar and bake it right in the rind. saves the bother of trying to carve up the thing. if you do it this way, put the squash cut side up in a baking pan and then put about an inch of water in the bottom of the pan. then you just scoop out the insides when it's cooked. so much easier. but if you're looking for a healthier option, cut the squash into slices and then brush it with some olive oil on each side and some fresh herbs ans salt and pepper and roast it that way. i tend to use rosemary, but that may just be because i like rosemary a fair bit. you can experiment with other herbs too. oh, and a little bit of ground cloves is really good with the brown sugar too. enjoy:)
